Nothing says summer like fresh vegetables and fruits. Our family enjoys growing a garden each year, which greatly increases our salad consumption during the season. It also gives me an opportunity to teach my kids about growing food, something very important given our current supply chain situation.
Gardening seemed like an intimidating task to me, but several years ago I decided to start small and give it a go, and I haven’t stopped yet. (See the progression in this article.) For this growing season, I expanded the space but still utilized the area to the fullest. Garden Fresh Summer Salad
Ingredients
- Fresh tomato (1 whole tomato chopped or several grape tomatoes chopped)
- Fresh cucumber
- Fresh Basil Leaves
- Strawberries
- Crumbled Blue Cheese
- Glazed Pecans
- Avocado (1 chopped)
- Fine Sea Salt
- Ground Black Pepper
- Olive Oil
- Balsamic Vinegar
Directions
- Chop tomato, cucumber, basil leaves and strawberries into a serving bowl.
- Top with cheese, pecans, avocado.
- Sprinkle with salt and pepper as desired.
- Lightly coat top with olive oil and vinegar.
- Gently stir once and serve.
